Southern cakes are by not means required to be &quot;12 layers or more&quot;.  The charm of the Little Layer Cake featured in the NY Times article is its pancake thin mini layers. 

Three or more cake layers made from scratch are enough to induce &quot;cake envy&quot;... :D If you&#039;re in a hurry, a bundt cake will work too. Especially when topped with a cooked icing!</description>

I will still look for it, and post a follow up to this.  But I agree, the cake crumb was good in this variation. I kept cooking @ 170 degrees because I didn&#039;t see the texture really change and I didn&#039;t know what to look for.  Still, the curd was tasty.  It took me 6 lemons to get the 3T of zest.  I only needed 3 for 3/4 C of lemon juice.  Thanks for the recipe.</description>
